Schezwan Paneer Fried Rice

Ingredients:


For the Fried Rice:


•    2 cups cooked basmati or jasmine rice (preferably cold)
•    200g paneer, cubed
•    1 tbsp oil (sesame or vegetable)
•    1 small onion, chopped
•    ½ cup bell peppers, chopped
•    ½ cup carrots, finely chopped
•    2 cloves garlic, minced
•    1 tsp ginger, grated
•    1 tbsp soy sauce
•    1 tsp vinegar
•    ½ tsp black pepper
•    Salt to taste


For the Schezwan Sauce:
•    1 tbsp oil
•    1 tbsp finely chopped garlic
•    1 tbsp finely chopped red chilies (or ½ tsp red chili flakes)
•    1 tbsp tomato ketchup
•    1 tbsp soy sauce
•    ½ tsp sugar
•    ¼ tsp salt


For Garnish:
•    2 tbsp chopped spring onions
•    ½ tsp sesame seeds (optional)

Instructions:
1.    Make the Schezwan Sauce:
o    Heat oil in a pan, add garlic and red chilies. Sauté for a minute.
o    Stir in tomato ketchup, soy sauce, sugar, and salt. Cook for another 2 minutes.
o    Set aside.
2.    Crisp the Paneer:
o    Heat 1 tbsp oil in a pan and fry paneer cubes until golden. Remove and set aside.
3.    Stir-Fry the Vegetables:
o    In the same pan, add more oil if needed. Sauté onions, bell peppers, carrots, ginger, and garlic for 2-3 minutes.
4.    Combine Everything:
o    Add the cooked rice, Schezwan sauce, soy sauce, vinegar, black pepper, and salt. Mix well.
o    Toss in the crispy paneer and stir-fry for another 2 minutes.
5.    Serve & Enjoy!
o    Garnish with chopped spring onions and sesame seeds.
o    Serve hot with a side of raita or a fried egg on top!
